Cracking the Parmigiano at the Festival

Sabato’s cheesemonger Calum will crack a 40kg wheel of Parmigiano Reggiano.
The Casearia Montecoppe dairy company grow their own feed & cereals that they feed their Friesian cows that produce their milk to make their Parmigiano. The cows are permitted to graze over 220 hectares of land inside a regional park – happy cows, happy cheese!
Sabato will also have their Bruschetta range available, delicious toppings for bruschetta with flavours such as tomato, caper, olive, hot artichoke, peperoni and porcini. Also perfect to stir through risotto or pasta or use as a topping for crostini, or Italian style bread.
