Cracking the Parmigiano at the Festival

Sabato’s cheesemonger Calum will crack a 40kg wheel of Vacche Rosse – red cow Parmigiano which has a more concentrated, richer, longer aftertaste than most Parmigiano as well as a wheel of Solo Di Bruna – brown cow Parmigiano, a salty, buttery cheese with caramel notes and a nutty crunch. Sabato will also have a range of goodies including the most luxurious potato chips around – Tartuflanghe truffle chips, made with the highest quality potatoes crisped in olive oil and sunflower oil and then seasoned with Italian truffles! We will also have Giusti Riccardo balsamic, made from specially selected grape musts and aged in antique barrels resulting in its natural viscosity, thickness and sweetness. Perfectly paired with Parmigiano Reggiano or drizzled over risotto or salad.
